Mine would be Phish doing the Rolling Stones, Loving Cup; Stevie Wonder’s, Boogie on Reggae Woman; and Ween’s Roses are Free
Phish played Velvet Underground’s "Oh! Sweet Nuthin’" and Jimi Hendrix’s "Bold as Love" at the Shoreline amphitheater 2 nights ago. Man, they know how to pick good covers!

I know what you mean by Phish. They are great in concert and cover so many differenct songs….WELL! My quick list:
Grateful Dead – El Paso (Marty Robbins) I think of my parents when I hear this because I grew up hearing them play this song.
Black Crowes – Song of Love (Stephen Stills). Had a new found respect for them when they played this.
Warren Haynes – She Said, She Said (Beatles). What can I say, Warren is great period.
Jonathan Edwards – She Loves You (Beatles). He put his own slow spin on this and it was amazing.
John Mayer – Inner City Blues (Marvin Gaye). Not an overly big fan but when I heard him do this, blew me away.
*Keith – Gloria was originally done by the group called Them (had van morrison in it) and as far as the Alabama song:
